How brilliant is that concept? The Still Austin Whiskey Co crafts 100% of their whiskey in-house from grain-to-glass, using only Texas-grown grains. The wild central weather fluctuations in Austin help to age their whiskey to perfection. I tried Red Corn Bourbon Whiskey, which represents summer’s bounty, and the Cask Strength Rye Whiskey, which celebrates artistry and its inspiration. Each is smooth, distinctive, and Texas strong for a favorite cocktail, on the rocks, or neat for the full-flavor purists among us.
Red Corn Bourbon Whiskey – Summer Batch
For release this summer of 2023, represented by the heat-loving red snake and desert cactus, the Still Austin Whiskey Co combined the robust nuttiness of Jimmy Red corn with the sweet spiciness of rye, resulting in a bourbon with Creamsicle and black tea scents. Yum. This is followed by a palate of peppermint and marzipan, resulting in a most distinctive bourbon experience. The nose is orange zest, Creamsicle, black tea, shortbread, brown baking spice and apple crisp. The palate is peppermint, brown sugar, marzipan, maple syrup, buttered biscuit, and toasted almonds. The finish is a complex, luscious blend of dark brown sugar, rum raisin, peppercorn, ripe red grapes, cranberry and dry red wine. Sample the Fall 2023, Winter, 2023, and Spring 2024 blends too. Each is a way to honor the seasons.

Cask Strength Rye Whiskey – A Liquid Ode to the Artisan /116 proof
As with a painting, distilling spirits represents an intermingling of craft and intuition. Cask-strength whiskey combines the subtle nuance of their prized “Artist” Rye Whiskey with the bold intensity of a barrel-proof spirit. The result is vigorous complexity. Nancy Fraley is the Master Blender. The nose is a blend of cherry cobbler with cinnamon crust, candied ginger and lemon peels, and apricot streusel coffee cake. The palate is a meld of grilled peaches with mint ice cream, apple and marzipan dumplings, gingerbread cookies with and lemon zest. The finish is an inspired mix of baking spices in brown butter, muddled cherries, and mint leaves.
